Azerbaijan completes the Caucasus trio alongside Armenia and Georgia. Baku is the region’s most unexpected capital: a walled medieval town beside three glass Flame Towers, with the Caspian right in front. The country is called the land of fire because natural gas seeps from the ground and has burned by itself for centuries.
Zoroastrianism left its mark here in the temples of eternal flame. Persians, Arabs and Russians all passed through. In the late 19th century Baku produced half the world’s oil and filled with art nouveau mansions. Independence came in 1991.
The old city of Icherisheher with the Maiden Tower, a UNESCO site. The Flame Towers, lit at night as though burning. Yanar Dag, a hillside that burns without stopping. Gobustan with rock carvings forty thousand years old and its mud volcanoes. And Quba with its mountain villages.
Plov, saffron pilaf, comes in dozens of versions. Dolma will remind Greeks of home. Grilled kebab is served with flatbread and fresh herbs. And black tea is drunk from armudu glasses with jam.
